Ingredients
3 tablespoons butter
3 cloves garlic, minced
1 shallot, minced
2 bunches spinach, chopped
3 cups canned artichoke hearts, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons paprika
2 teaspoons lemon juice
1 (8 ounce) package cream cheese
4 ounces mozzarella, shredded
¼ cup sour cream
¼ cup mayonnaise
¼ cup parmesan, grated
INSTRUCTIONS
Heat butter in a large skillet over medium high heat. Add shallots and garlic and cook until softened and shallots are slightly translucent. Add spinach to pot in 2-3 batches, stirring frequently until spinach has wilted and most of the liquid has evaporated. Add artichokes, lemon juice, and seasonings and cook 5 minutes.
Reduce heat to low, stir in mozzarella and cream cheese and cook until cheese has melted, 2-3 minutes. Stir in sour cream, mayonnaise and parmesan and cook until parmesan has melted. Adjust seasonings and serve.
Note: This dish may also be cooked in a cast iron and placed under the broiler for 4-5 minutes for a crispy cheesy top.
