Maple Glazed Red Cabbage with Turnips & Sausage

This one-pot meal can be thrown together on a busy weeknight, is full of local goodness and easily reheated the next day.

Ingredients

Serves 4

2 tablespoons unsalted butter, divided

2 Andouille sausage

1 onion, thinly sliced

1/2 pound turnips, sliced into half moons

1 1/2 pounds red cabbage, thinly sliced

1 tart apple (such as Granny Smith), cored and thinly sliced

1/3 cup maple syrup

1/4 cup apple cider vinegar

1/2 teaspoon caraway seeds

1 bay leaf

1/2 teaspoon salt

1/4 teaspoon ground black pepper

INSTRUCTIONS

Preheat oven to 350. In a Dutch oven over medium-high heat, heat 1 tablespoon butter. Place sausages in dutch oven and cook until browned on all sides (~5 minutes), turning sausages frequently. Remove sausage links and set aside. Add onions to Dutch oven and cook over medium heat until translucent, 3-5 minutes. Add remaining tablespoon of butter and once it has melted, add turnips, apples, and cabbage. Cook for 2 minutes until the cabbage begins to soften. Add remaining ingredients and stir to combine. Slice sausage and return to Dutch oven. Stir to combine. Place lid on Dutch oven and braise for 30 minutes. Remove from oven, adjust seasonings and serve.
