Ingredients
Makes 2 dozen cookies
1 3/4 cups flour
1/4 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons butter
3/4 cup light brown sugar
1/2 cup granulated sugar
1 egg
1 tablespoon red food coloring
1 tablespoon white vinegar
1 teaspoon vanilla
Powdered sugar for dusting
INSTRUCTIONS
Preheat oven to 350. In a medium bowl, sift together dry ingredients. In the bowl of a standing mixer fitted with a paddle attachment, cream butter and sugars until light and fluffy. Add the egg and mix until thoroughly combined. Add the food coloring, vinegar and vanilla until combined.
Add the dry ingredients to the wet and mix on low until thoroughly incorporated. Using a 1.5″ cookie scoop, scoop dough into rounds onto a parchment lined sheet and freeze for 20 minutes. Before baking, roll each cookie in powdered sugar. Bake for 18 minutes, rotating cookie sheet halfway through baking. Allow to cool before serving.
